{"id":9708,"date":"2024-02-26T00:00:00","date_gmt":"2024-02-25T23:00:00","guid":{"rendered":"https:\/\/www.cabinet-magar.fr\/actualites\/restauration-du-nouveau-en-matiere-dhygiene-alimentaire\/"},"modified":"2024-02-26T00:00:00","modified_gmt":"2024-02-25T23:00:00","slug":"restauration-du-nouveau-en-matiere-dhygiene-alimentaire","status":"publish","type":"post","link":"https:\/\/www.cabinet-magar.fr\/de\/actualites\/restauration-du-nouveau-en-matiere-dhygiene-alimentaire\/","title":{"rendered":"Restauration : du nouveau en mati\u00e8re d\u2019hygi\u00e8ne alimentaire"},"content":{"rendered":"<p>Le secteur de la restauration est encadr\u00e9 par des r\u00e8gles sp\u00e9cifiques pour tout ce qui concerne l\u2019hygi\u00e8ne alimentaire. \u00c0 ce titre, les professionnels doivent suivre une formation, dont le contenu et la dur\u00e9e viennent d\u2019\u00eatre modifi\u00e9s\u2026<\/p>\n<h2>Formation hygi\u00e8ne alimentaire dans la restauration : revue et corrig\u00e9e<\/h2>\n<p>Au sein des \u00e9tablissements de restauration commerciale, au moins un membre du personnel doit avoir suivi la formation relative \u00e0 l\u2019hygi\u00e8ne alimentaire.<\/p>\n<p>Fix\u00e9s depuis 2011, le contenu et la dur\u00e9e de cette formation viennent d\u2019\u00eatre actualis\u00e9s. Il est d\u00e9sormais indiqu\u00e9 que la formation :<\/p>\n<ul>\n<li>est d\u2019une dur\u00e9e de 14 heures ;<\/li>\n<li>comporte de <a href=\"https:\/\/www.legifrance.gouv.fr\/jorf\/id\/JORFTEXT000049171606\" rel=\"noopener\" target=\"_blank\">nouveaux r\u00e9f\u00e9rentiels<\/a>, portant notamment sur l\u2019identification des grands principes de la r\u00e9glementation en relation avec la restauration commerciale, sur les aliments et risques pour le consommateur, sur les dangers microbiologiques dans l&#8217;alimentation, sur le plan de ma\u00eetrise sanitaire, etc. ;<\/li>\n<li>doit pr\u00e9voir des p\u00e9riodes de 2 heures minimum (par p\u00e9riodes de 7 heures) d\u00e9di\u00e9es \u00e0 des mises en situation avec manipulation de mat\u00e9riel.
